We worked in their greenhouse, which uses a hydroponic system. A hydroponic farm grows food by using water-based mineral nutrient solutions in an artificial environment. The envirnoment may seem artificial but there nothing is artificial about the delicious food they grow! Since they harvest and donate produce to people in need directly from that property, the produce maintains a very high value of nutrition. It’s much healthier than produce at the grocery store that has to wait to be cleaned, packaged, and often transported hundreds or thousands of miles. About half of our time was spent harvesting lettuce heads that would be given to families that week. The Foodbank staff ensures that recipients of lettuce heads know how to preserve it so lettuce can last for up to three weeks after they receive it. The remainder of our time was spent working closely with their wonderful intern, Nathan, who showed us how to properly sanitize the panels that the lettuce was grown in. The Foodbank puts a strong emphasis on food safety. For the HHI team, it was both fun and educational volunteering with The Foodbank. It was an overall great experience to see how one of our community partners addresses local food needs and encapsulates a sustainable and equitable food system.
